For today’s post I decided to share my recipe for Easy Pimento Cheese Spread from Other Uses for a Wooden Spoon a.k.a. the Corbin’s Bend cookbook. This recipe is one that Lainie knows well. It’s a staple of almost all gatherings in the southeastern US. I’ve had it at weddings, bridal showers, funerals, you name it. I’m sure Lainie has turned up with the pimento cheese sandwiches at one community gathering or another.
Easy Pimento Cheese Spread
2 c. shredded cheddar cheese
½ c. mayonnaise
1 small (4 oz.) jar diced pimentos (pimento peppers), drained
Combine all ingredients in a bowl. Mix together until well blended. Add salt and pepper to taste.
Options: May substitute garlic salt for regular salt. May substitute a spicy seasoning mix, such
as Cajun seasoning for salt for a version with a little more kick.
This works well for sandwiches or as a spread for crackers or toast.
